Just under 200 cals per serving and absolutely delicious! Minestrone with a bit of a kick.

  1. This freezes well, meal preps well, and tastes delicious. Perfect for the nights you don’t feel like chopping/prepping too much. This gives me 5 huge servings, but can be split smaller and paired with salad or crackers. I used:

    1 large can diced tomato.

    About 2 cups of mixed frozen veggies. (Carrots, peas, beans, corn)

    Half a red onion.

    Half a yellow bell pepper and Half of a red.

    3 cups kidney beans.

    A couple cloves of garlic.

    A bag of shredded Coleslaw mix.

    About 4 cups water. Add a half bouillon cube if you like. Chili flakes for kick.

    Paprika and cumin to taste.
