    Very simple to make. The creaminess comes from cashews. The rest is tomatoes, red peppers, paprika, onion, stock, and salt. Peppers and tomatoes are so low calorie that many dishes based on them can be made diet friendly. Both are high in vitamin A & C, and tomatoes are a good source of lutein, lycopene, and zeaxanthin which you need for eye health.
