[homemade] Porchetta Roast

  1. Recipe:
    – pork belly 3 pounds
    – sprinkle meat side with plenty of sea salt
    – roast around 2tbsp fennel seeds and some pepper corns. Ground up. Rub the meat side of the pork belly with it.
    – make an herbal paste with rosemary, sage, thyme, garlic and olive oil. Rub meat side with it.
    – Roll it up and tie with string
    – Cook for 2-3 hours in oven at 160C
    – then crisp it up for 10-20 mins by turning up the heat to around 240.
    – stick in ciabatta bread
    – enjoy
