-Step 1: make a basic pie base / crust (I won’t detail recipe as there are a million out there). Only thing I did different was throw a little dried thyme into the dough.
-Step 2: mix sheep’s cheese with a little olive oil and egg yolk to make it easily spreadable and spread it on the rolled out dough
-Step 3: arranged mandolined zucchini in whatever pattern you want.
-Step 4: drizzle healthy amount of olive oil over, season with salt, and dried thyme (fresh works too I just didn’t have any)
-Step 5: start with one part of the crust and fold jt over for a galette pattern
-Step 6: egg wash brush the folded over crust and I threw on q little flakey maldon salt for little salty crunches on the crust
-Step 7: bake at 180C for 30ish minutes or until golden brown and crispy. Where parts burn faster than others put a little bit of tinfoil if needed so it doesn’t burn
