Quick and easy as it takes ~30 minutes – replicable without having to go for a dive with store-bought crabmeat!
Ingredients:
• 4 cups cooked rice (ideally day-old)
• Cooking oil as needed
• 4 cloves garlic, minced
• 2 large eggs
• 2 cups picked cooked crabmeat
• 2 tbsp crab roe (optional)
• 1/2 cup each of green onion and cilantro, finely chopped
• 4 tsp fish sauce (+ more for serving)
• 2 tsp soy sauce
• 2 tsp ground white pepper
• 1 tsp ground black pepper
• Salt to taste
• 1/2 cucumber, sliced to serve
• Lime wedges to serve
• Chopped red chilis to serve
Steps:
• Heat cooking oil in wok over medium heat; toast roe (if using) for a few minutes and set aside
• Turn heat to high and toast garlic in wok until golden and fragrant
• Push garlic to sides of work and crack in two eggs in the center, mixing rapidly to scramble
• Add cooked rice and break up clumps; stir well with eggs
• Add crab meat and roe (if using); stir well • Add soy sauce, fish sauce, black & white pepper and salt; stir well
