Heated 300ml full fat milk, 300ml double cream and a little vanilla bean paste. Whisked up 4 eggs and 3 tbsp of caster sugar then whisked in the milk/cream.
Cut the bread into triangles and arranged half of them in a greased dish. Added a few halved glacé cherries and some chopped bits of dark chocolate. Repeated with the rest of the bread and more cherries and chocolate.
Poured the custard mixture over and sprinkled a little demerara sugar on top.
Left in the fridge to let all the custard soak in. Baked at 180c fan for 30 minutes, covering with foil for the first 20 minutes.
