  1. Chop and sauté the veg, then add rinsed quinoa, enchilada sauce, a can of drained and rinsed black beans, and about a cup to 2.5 cups of water. Bring to a boil, cover, and lower heat. Simmer on low for ~15-20 minutes, then stir in the juice of 1 lime. Top with whatever you like! I used some Good Planet cheddar shreds (not factored into the nutritional info), scallions, hot sauce, and radishes!
