Salsa baked rice! Can be eaten in a wrap but I saved those calories. Served with Earth’s Own sour cream and some daiya. 208 calories. Recipe in comments

  1. Salsa baked rice recipe:

    1 medium onion, diced

    1/4 cup (or 1 small can) diced green chilies (if you can’t find them, use jarred jalapenos)

    1/4 tsp cumin

    1 cup salsa

    1 cup vegetable broth

    1 cup rice

    2 tbsp lime juice

    1/2 can black beans, rinsed

    1 tbsp cilantro (I hate cilantro so I use parsley instead)

    Preheat oven to 350. Saute onion in olive oil until almost translucent. Add peppers and cumin and saute until onion is translucent. Add salsa, saute. Add broth, mix. Add 1 tbsp of the lime juice. Bring to a boil in frying pan, add rice. Bring to a boil again. Once bubbling, transfer to your casserole dish. Use a lid or tinfoil to cover. Bake for 40 minutes and pull out. Add other tbsp lime juice, cilantro or parsley, and black beans and mix. Serve on a wrap or in a bowl with cheese and sour cream and green onion!

    *This was a recipe on kalynskitchen but it got removed so I’ve written this from what I remember. It’s delicious!!
