    Recipe:

    100g mushrooms
    3g dried shiitake mushrooms
    40g grated carrot
    90g kale and/or chard
    1 oz whole wheat spaghetti, cooked
    2 oz extra firm tofu
    1 package Savory Choice veggie pho concentrate
    1 piece each star anise, clove, Sichuan pepper

    I just heated 2 cups water in a saucepan, added the pho mix and the spices, then the mushrooms, carrot, and chard. When they were cooked I threw in the noodles and tofu.

    The bowl was ~3 cups and super satisfying. Plus really high protein!

  2. This sounds really easy to make. i think I’ll use rice noodles instead of spaghetti
