So I want to make nutritious simple cookies that I could make a big batch and store for longer and have them as a snack or a little meal. Im gonna be a uni student soon so that probably explains why I will lack time and need quick healthy cheaper, simpler snacks 🙂

Im a newbie when it comes to baking anything really and It is going to be my first time becoming vegan. So please don’t make fun of me being a bit stupid now 😀

I found these : [link to a recipe](https://www.thespruceeats.com/low-calorie-vegan-oatmeal-cookies-3378213) which are almost perfect for me, because they contain dried fruit and I have homemade dried berries from this summer season berry picking! BUT it contains mashed banana which I suppose would decrease their shelf life? I want to be able to store them for like 2-3 months.

    well banana is used as a binder in this recipe, you could probably achieve the same effect with some flax meal mixed with water? same as you’d make a flax egg. it would probably last longer! edit: also maybe store them in the freezer? they would definitely last longer then

  2. Cookies freeze very well! I do not think that any kind of cookie will last 2-3 months without being frozen.
