    So the pic is on the verge of /r/ShittyVeganFoodPorn because I don’t know how to take food pics, BUT I promise you, this is delicious, nutritious and filling. I’m a junk food vegan who is trying to improve my meals because I feel like complete garbage all the time.

    Totals:
    – 1070 cals
    – 40 g fat
    – 33 g fiber
    – 83 g protein

    I split this into three servings, but if you’re doing /r/volumeeating or /r/IntermittentFasting, you could easily eat it all and get a really impressive nutritional bang for your buck.

    1. Sauté Spicy Mexican Cauliflower Rice (Trader Joe’s) for about 7 minutes
    2. Add in edamame corn (Trader Joe’s) and sauté for another 7 minutes
    3. While all of that is sautéing, put cubed tofu into an air fryer and cook for 12 minutes at 400. I opened my air fryer and shuffle everything around every 4 minutes.
    4. Mix everything together and sprinkle entire sauté with 3 tbsp nooch
