    Dry beans cooked in the Instant Pot with carrots, celery, onion, bell pepper, and kombu; brown rice; and fresh tomatoes & onions. Less than 300 calories as served (1 cup beans, 1/2 cup rice, 1/2 cup tomato, 1/4 cup onion).

    I cook a big pot of everything and eat it all week for at least one meal daily. Between the price tag, the amazing flavor, and the health benefits, it also contributes to saving a life every day. It really doesn’t get much better than that.

    I’ve heard adding kombu can improve the texture of the beans. I haven’t tried it yet, do you find that to be the case?

  3. This looks so good!!!! I’m very new to meatless life and things like this are great to find for quick meals! (Never thought of having beans and rice for breakfast, either! )
