My first time making capocola and the only thing I had which was large enough to encase the cops was a sheep rumen. I figured I’d give it a try but a bit concerned it may not be permeable enough to release moisture adequately. Further I encased the coppa so that the tripe is on the outside. Anyone know whether it will turn out okay or should I remove that casing and try something else?

I’d say stick to it for science! (Cuz I just like unusual experiments sometimes.) That said, there are plenty of people that don’t use a casing at all with good results.
