    My main changes for full recipe: 138 g Forager cashew yogurt for creaminess instead of cashews (saves time and tasted great), added 1 T of sugar to balance the flavors, used fresh corn (3/4 cup) instead of canned, spray oil for roasting bell pepper/onions instead of pour oil, added some of the cashew yogurt as a topping.

    Pictured is 1.5 cups. Recipe as I made it came to 9.5 cups total.
