Gorgeous! I always have a hard time with the eggplant like it gets leathery when i make this sliced style version so i do the other one that’s not as beautiful more like a chopped stew and i add chickpeas so it’s a one pot meal
How did your eggplant turn out here? Maybe i need to just try a different recipe
