The capocola in sheep rumen seems to be progressing well. I took it out of the wine fridge this morning. Cut off some of the excess rumen where I had double wrapped and also re-tied as the strings were loose. Nice to see some white mold growth beginning which I take as a positive sign. Smell is neutral. Still soft but certainly firming up a bit. Once the rumen seems fully attached and dry I will take the strings off in the hopes I’ll get a nice final shape.
