Followed the top recipe on google and i am realizing its awful. Lol

I covered the chunks in a hefty amount of course kosher salt And left them in the fridge for 26 hours. Then i took them out and rinsed them off with water and then white wine. I sprinkled each piece with spices and then put them on strings over cookie sheets. They have been in my basement like that for 24 hours with parchment paper over them. Temp is steady at 60 degrees and humidity is 60-70%. Do they look okay? Will this work?

    How much % salt did you use? Any cure #2? 26 hours isn’t enough to cure. The air flow isnt that good when its laid out like that.
