I started a pancetta dry on June 6, now pulling it out of hanging fridge after 30% moisture loss. When I unwrapped from the cheese cloth I noticed white fuzzy mold (no black) in the crevices of the belly. Is this safe to eat ?

Slice her open. White mold is generally fine and sometimes encouraged.
