Menudo I believe is stomach, so it wouldn’t work as casing.
Tripa is intestines, so it may work. It will probably have all the linings and mucous soft parts that get removed/cleaned when preparing casings. If you are ok doing that cleaning yourself it may work out.

You can use bung. Most international markets carry it. Beef is the largest and easiest to work with. Tripe won’t work

Where I live now and everywhere else too tripe has always been the stomach, it has a highly textured lining and is wholly unsuitable as a casing as is.
