This is my first dry cured and aged project. I’ve done bacon and faux deli ham before, but never anything that took multiple months of curing and drying. I was a bit nervous before I cut it open and fell in love with it as soon as I saw the inside. It’s currently sitting in a vacuum bag in the fridge to equalize for the next month.
