First two projects I made after building my fridge a few months ago. I’m surprised how well they turned out, got all info from 2 guys and a cooler channel om YouTube.

    That’s awesome congrats! Great cross section, what grind size did you use? Did you grind meat and fat separately? Any tasting notes? What culture did you use?

  3. So I finally got my chamber up and running (still tweaking humidity) however my question is can you ferment your salami in the same chamber that you dry it in or should you ferment it else where and then place it in your drying chamber?
