saucisson sec and cacciatore salami. Inoculated with mould 600 and using tspx starter. I put these in about 50 hours ago at 20 Celsius and 90%rh and pulled out to check on pH level (reduced well, just under 5.3) and noticed slight off-white discolouration. Can synthetic collagen casings give this sort of hue or is it the dreaded yellow?
