How does this compare to the one in Vegas?

we asked for, and received, more mashed potatoes when we visited the one in St.Germain. So good!

Does anyone know why they don’t target the same level everywhere? For example this one Paris is only one star while the one in Macau is *** (and well deserved) whereas in Dubai they didn’t get any. And it’s clear that they don’t even try to get to the same level everywhere, looking at the pics on different cities. So forth in different cities they very different levels.
My experiences in Dubai, Tokyo and Macau were incredibly different, although I do realize they’re different brands but even within l’Atelier brand they have all these different ratings.
Is there a reason they don’t try/manage to reach the same level everywhere?
