    My original title was – Quinoa with veggies and curried baby corn. But for some reason the auto bot would reject the post saying it doesn’t meet the rules. So I changed the title to what you see above.

    Well, here is the real intended title – ‘Quinoa with veggies and curried baby corn.’

    Ingredients:

    1 cup white quinoa rinsed in cold water, 1 whole carrot peeled and chopped, half cup frozen green peas, 1 medium onion chopped, 3 Roma tomatoes chopped, 1 can cut baby corn drained and rinsed, 3 cloves of fresh garlic finely minced, 1 tablespoon cooking oil, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 2 teaspoons paprika, 1 teaspoon cayenne pepper, salt and pepper to taste.

    Cooking instructions:

    Quinoa – Cook 1 cup quinoa in 2 cups of water in a cooking pot on medium heat. When quinoa is about half-cooked, add chopped carrots and frozen peas. Mix well and let cook on low heat until all of the water is absorbed. Turn the heat off and set aside.

    Curried Baby corn – Heat cooking oil in a saucepan and sauté chopped onions on medium heat until lightly browned. Add minced garlic and sauté for a couple more minutes. Add chopped tomatoes and let cook until they’re mushy. Add canned cut baby corn and all the spices and a cup of water. Let cook for a few minutes. Add salt and pepper to taste and turn the heat off.

    Serve quinoa and curried baby corn together. Garnish with chopped cilantro if you desire. Enjoy!
