Pumpkin sauce, white beans with vegetables in tomato sauce, and Sriracha sweet potato

    Pumpkin pasta sauce:

    Salt.
    2tbsn canola oil.
    3/4 cup pumpkin puree.
    2 small yellow onions.
    4 large garlic cloves.
    1/3 block of soft tofu.
    1 tbsn fresh lemon juice.
    2 slices white American cheese.
    About 3/4 water (use your instinct, and add the water slowly, refraining from oadding too much.

    Using a medium pan at medium heat, Add oil to medium pan and Saute the onions, about 4 minutes. Throw the garlic in, another 1 minute+
    Lower the heat as low as it goes and wait until it’s cooler before adding in the tofu, pumpkin purees.

    Let is simmer together for about 5 minutes , make sure it’s not top high of a boil so it doesn’t burn. After 5 minites, turn heat off and immediately add the 2 slices of cheese, ripped up into small/medium sizes so stirring is easier. Add the lemon. Stir. Now all you have to do is get out your emulsifier and make it as smooth as you’d like 🙂

    White northern beams in tomato basil sauce.

    Decent amount of salt.
    Extra oil- about 3 tablespoons in all, 2/3 canola, 1/3 olive oil.
    15.5oz can white northern beans, lightly drained.
    1 tbsn tomato paste.
    2large garlic cloves.
    1/4 of a large green pepper.
    2 stalks celery.
    1 med/large tomato on the vine.
    Top of a basil sniping; about 2 – 3 tbsn worth (save a little from the pot if you want a garnish:) )

    In a medium saucepan with a lid at med heat, saute in oil the green peppers and celery 3-4 minutes. Put the lid on while it cooks. Make sure you salt with each change or next step. Add the tomato, tomato paste and basil. Stir, and cook about 2-3 minutes. Make sure you stir often so it doesn’t burn. Next add the beans. Cook for about 5- 6 minutes. Stirring every 1-2 minutes.

    Siracha Sweet potato. 375° 28-30minutes;2.5minutes at 550° broil.

    1 large sweet potato, skins removed.
    About 1 tbsn (it was a 3 second squeeze lol)
    1 tbsn brown sugar.
    1 tspn fresh ground coriander. .

    Mix everything in a bowl. Oil a casserole dish. Toss them in. Aluminum foil tight of the dish. 28-30 minutes at 375°

    I love sweet potato but I would trade two for just one parsnip though.
