  2. My first project. Lonzino pulled just shy of a month at 35% weight loss. I had it wrapped in collagen sheets and trussed. I cut it into sections after wiping it down to see the difference throughout.

    I feel like I definitely got some case hardening and I’m not entirely sure the center is right either. Advice is appreciated!!

    Ps – I added a small fan to the mini fridge chamber (currently has one more Lonzino @ 26%, and two pancetta that I’ll weigh after posting) halfway through. The fan drove my humidity from 70 to 80 so I run it for 5 mins in the morning and evening to keep it at 70. Anyone else have this problem or advice?

    I would not call that a loss. Perhaps a bit short of perfection but I’d happily consume it.

  4. Vacuum seal and let rest in fridge for a week. Moisture will redistribute and Center should firm up a bit. Not optimal but certainly looks enjoyable!

    Looks fine. Seal and let equilibriate in the fridge for a couple of weeks.
