It doesn’t smell bad. Actually smells a bit like salami.
I wiped it down with vinegar just in case

  2. I wouldn’t. You have a mix of black, green, and fuzzy. From the picture, you can see the same mold is spreading to its neighbors.
    How are you aging this?
