Did a batch of black salami this week. Basic recipe but coloured the meat only with squid ink and then mixed in the fat. Won’t taste any different but should look awesome. Aiming for 40% weight loss, so should be ready in about 5-6 weeks. Will post again when it’s done.

  2. That should be tasty. I’ve done one with squid ink and black garlic, it was a favorite for the family once I explained it wasn’t blood sausage…
