I’ve never had this happen before. This is after it sat in the fridge with the salt for a week. I was about to rinse and hang but this doesn’t seem good. No foul odor though. The discoloration has some depth because when I cut it away it’s still present within the piece.
Any thoughts on whether this is actually ok or not worth the risk. I’m real close to tossing it but the lack of smell has me wondering if it’s ok…

I would be trimming that part off, mostly because that inside part of the jowl is usually full of glands. I never cure that inside part because I haven’t yet found one without glands everywhere – and I’m certainly not eating them!
