New to this game. I have two small pancetta Tessa’s going along with two lonzinos. Lonzinos we’re wrapped in collagen sheets and wiped with mold 600 and are nearly 95-100% covered in a nice white mold.
Chamber sits at 58-62f with a RH of 70 (+/-5)
Recently the pancettas started getting some white spots and today when I checked I noticed other colors. Am I wiping with vinegar and then with mold 600 to avoid this for the rest of the cure? Am I tossing? Any guidance is appreciated! Cheers!

As long as there is no black mold, give them a good vinegar scrub, rinse and pat dry. Rehang, re spritz with M600

The top left patch of mold looks ok but the other has green spots. I would wipe down with vinegar like suggested. Then keep an eye on it.

There is nothing wrong with that mold, if you leave it go I am sure it will all turn into a green bloom which is fine. If you don’t like it wipe it off with some wine or vinegar.

Vinegar. Vinegar is always the answer! If there’s any left over, just take it like a shot. I know lot’s o grannies who swear by vinegar and they’re all well into their 90’s ;p

This was one of my best pancetta’s….Embrace the mold – so long as its is not red, orange, yellow or furry black (dark grey is fine).
