  1. Recipe:
    To make the broth, start by creating a base with a little bit of sunflower oil, one onion ,one spring onion and one garlic (if you have one carrot or parsnip, they are great additions, remember that garlic cooks faster, so it’s better to add it a bit later). Cook until transparent and soft.Then add 200gr tahini, 300ml vegetable broth, and one bag of miso. If you want the broth spicy, add some sriracha sauce. Blend everything together, and if desired, add some spices.

    Once the mixture is blended, bring it to a boil again, add 500ml of oat milk, mix well, and it should look like the picture. If you want it thicker, add more oat milk. Blend everything well to make the broth smoother. Then add soba (I used 200gr), 5 slices of tempeh or smoked tofu, aand any vegetable that you want (I used aubergine), Mushroom, and decorate it with chopped spring onion, and add sesame seeds or chili flakes or both.
