As the title states, mold started to occur on my bresaola recipe (Marianski recipe with some modified spices.) It first occurred about a week after hanging, and dropped from 850g to about 650g in that one week. I pulled it, wiped it, and put it in a vacuum bag to try and reduce any case hardening that may have occurred as that drop seemed pretty fast.
After two weeks in eq treatment, mold came back after the first day. The vacuum seal was still perfectly tight at the end of the two weeks, but I’m still concerned for this.
Smells fine, feels fine, but I may be ditching this one at the end of the hang regardless.
Wanted to know if I’m being too picky with the mold coming back so quickly, or if wiping it down every day is an OK practice.

Also, it is the only thing currently hanging in my cabinet. I am not too concerned about contaminating the cabinet, as I’ll be sanitizing afterwards anyway.
No worries mold really plays an integral part in the drying process. If I can figure out how to find my saved posts I’ll post my answer to a similar question a week or so ago
Wash it in vinegar water then dab it dry.
There is nothing wrong with that mold.
