I’m not sure this even qualifies as a recipe.

Rinse a head of escarole really well- it’s always gritty. Chop roughly. Set aside.

Sauté garlic to taste in olive oil in large deep pan or pot. I’m using my Ninja Foodi, and 5-7 large cloves of garlic.

Add the escarole, stir frequently. Keep on low medium heat. It will cook down in a few minutes.

Add a can or two of cannellini beans, and simmer on low for about an hour. Add salt to taste. Let sit for about an hour before serving to let the tastes meld.

Serve as a soup, over pasta or rice, and add fresh black pepper to greatly enhance the taste

Cheap, healthy, vegan even, vegetarian if you sprinkle some pecorino on top.
