Garlic Tofu with Soba noodles tossed in peanut-soy sauce.

    Ingredients:

    Soba noodles – 8oz. These are made of buckwheat and hence are gluten-free. Tofu – firm kind. 1 block. Unsalted roasted peanuts – 1/3 cup, low sodium soy sauce – 5 to 6 tablespoons. Toasted sesame oil – 1 tablespoon. Fresh garlic – 4 to 5 cloves finely minced. A bunch of chopped fresh green scallions. Sesame seeds and crushed pepper for garnish. Salt and pepper to taste.

    Cooking instructions:

    Step 1 (Tofu) – Saute diced tofu in a little bit of olive oil and minced garlic on medium heat until brown. Set it aside.

    Step 2 (Peanut sauce) – In a spice grinder, process the peanuts to make a powder. Mix the powder with soy sauce and toasted sesame oil and whisk to a smooth sauce. Add some water if needed. Set the sauce aside.

    Step 3 (noodles) – Cook Soba noodles as per instructions on the packet. Drain and toss the noodles with the above peanut sauce. Check for salt and pepper.

    Step 4 (Garnish) – Serve Garlic Tofu over Soba noodles. Garnish with crushed red pepper flakes, Sesame seeds and chopped green scallions. Enjoy! 🙂
