The new setup is ready, but my fridge don’t go above 5c… will the low temp affect the end product?

    It’s going to slow things down quite a bit, check out inkbirds temp controller, it’s cheap and easy to set up, also might want to keep an eye on your humidity, it looks low and will get lower once things start drying, setting you up for case hardening

  3. That’s a big fan for such a small fridge, I’ve got a beverage fridge of similar size and I removed my built-in fan because my first batch of charcuterie was case hardened to shit. As long as you’re opening the door once or twice a day, you have enough airflow. I’d switch the fan out for an evadry humidifier. I also second the opinion that your should get an INKBIRD temperature and humidity controller.

  4. Inkbird is perfect and no real worries at high humidity conditions early phase. Run it at 50F for a week then bump up. The fridge will work a little harder and get rid of 60+% moisture by weight.

    The colder it is the better it will turn out. It will take twice as long(possibly) but you get a much better flavor. The funky flavors that come from warmer drying will not be there and a much milder flavor will develop
