Basturma, wondering why am i getting this dark red color,,, tasts and smells amazing.

    Well, it’s beef. Beef is red. Color just intensifies as it loses water but it shouldn’t discolor since O2 can’t reach it.

    Yeah that looks like normal bastrma. At least my middle eastern brain says it is.

  6. Well, my no nitrate salt box pork tenderloins also end up red, so I’m not surprised. But I’ll parrot everyone saying that the intensity of colour is likely from absorbing some of the beet
