    3 Servings of Hoppin John (modified Betty Crocker Recipe):

    * ​black eyed peas, 100 g dry wt
    * medium bell pepper
    * ½ medium onion
    * 3 stalks celery
    * 2 cloves garlic
    * 14.5 oz can diced tomatoes w chilis
    * 1 bay leaf
    * 1 T Better than Bouillon “No-Chicken” flavor
    * Salt & dash liquid smoke to taste

    Cook black eyed peas according to package directions, set aside. Cook bell pepper, onion, celery, garlic with spray oil. Add diced tomatoes, bay leaf, bouillion, salt, liquid smoke and black eyed peas and cook down.


    Also on plate:

    104 grams of collard greens sauteed in broth

    49 grams of cooked rice.

    Cornbread mini muffins (aka muffin tops) are 50 cal each. Used [this](https://www.splenda.com/recipe/corn-muffins/) recipe but instead of egg used Just Egg (1T) and limited oil to 3 tsp instead of 1/4 cup. Used 27 grams of batter per muffin top. Kinda like cornbread “cookies” 🙂 but thicker.

    Please don’t get mad because this looks delicious, but at first glance I thought I was looking at candy corn on a plate, it’s so colorful
