At what point is case hardening not able to be mitigated by a vacuum bag and letting it equalize in the fridge? by therealmanbat Charcuterie
butch7455 on March 19, 2023 12:51 pm Looks good, like you said, vac seal it. I usually leave it under vacuum, 3/4 the amount of time it took to dry.
