Tacos with lentils, cabbage, bulgur, spinach and crème fraîche

  1. It’s my own recipe but you can probably find others like it. I just made it 2 hours ago

    **Filling ingredients:**

    – 140 g (dry) Green Lentils

    – 150 g (dry) bulgur

    – 450 g (one medium) pointed cabbage

    – 150 g BBQ sauce of choice (*I used a chipotle one*)

    – 120 g generic taco sauce

    – 1 pack genetic taco seasoning (and maybe some added smoked paprika)

    – Fat of your choice (*I used Becel*)

    **Instructions:**

    – Boil lentils and bulgur for approx. 12 minutes in 2 different pots

    – Cut cabbage into medium pieces and sauteed it for 15-20 minutes in oil/butter/margarine

    – Sauteed cooked bulgur in it’s own pan (+fat)

    – Sauteed cooked lentils in it’s own pan (+fat), occasionally adding some water, and mix the bbq sauce, taco sauce and seasoning in with the lentils.

    – Combine it all together and let it cook for 2-5 minutes

    **Plating:**

    Warm your tortilla of choice (*I used mix corn/wheat of a small size*) and add some fresh spinach, a heavy spoon of the filling and a teaspoon of some crème fraîche ! *(I used a low fat one but high fat taste better*)

    I only occasionally eat vegetarian, but I find this recipe taste way better than any homemade taco I’ve had with meat !

    yumm, I love spiced bulgur + lentils + quinoa for the base of my burrito bowls! Thanks for the inspo, I’ll do tacos next, with avocado, roasted sweet peppers, jalapeno peppers, fried teriyaki tofu and that creme fraiche

    You know what I’ve noticed, the vegetarian community doesn’t get nearly as much credit as they deserve for creativity. Well done!!!
