Birefringence. Some muscle packages can give the rainbow effect when cut at a certain angle. Light gets reflected and split into the spectrum similar to how a prism or rainbow refracts light. Common in brisket but occurs in other cuts as well.

So to go down the rabbit hole even a little further muscle proteins are arranged in strands called myofilaments, those are bound together to form myofibrils, myofilbrils bound together form muscle fibers when formed together form muscle bundles and finally whole muscles. This is what we would refer to as the grain so when somebody tells you to cut across the grain you’re cutting across myofibrils. When they’re cut at various angles they expose a cross section of myofilaments that reflect light under certain conditions and this is what produces the characteristic appearance associated with iridescence technically referred to as birefringence
