I am planning to buy this guy from Costco but want to make sure I time things properly. Ideally I would open it for a gathering on Nov 18 and I would like it to last through New Years. Is this possible if I take proper care of it? Also I have a chamber vacuum sealer — if I package slices and keep them in the fridge is it fair to assume those packages would be good for at least 3 months from when sealed?

    Iberico freezes quite nicely, and is actually easier to slice super thin on a slicer from frozen. I would recommend deboning and freezing in multiple pieces wrapped in parchment, then foil, then vacuum sealed. I’ve done this personally with excellent results.
