  2. I’m feelin for that pancetta, did you give it a wipe with vinegar before you rolled it up?

    Coppa looks legit, sorry about the pancetta. If you have a vacuum sealer, what I’ve been doing on rolled meats is to roll them, truss tightly, and then vac seal in the fridge for a few days to let it really tighten up.

    Would trying the cable tie method for a rolled pancetta be a better bet next time maybe? I’ve never made one but have seen a couple of people here use cable ties and tighten them as time goes on so you really get it tight. Think I’ll try that if I ever attempt one
