Ingredients
* 1 box white cake mix (I used Duncan Hines)
* 1 cup of water
* 1 tsp oil
* zest of one large orange
* 1 T Just Egg
* 2 tsp baking powder
* 2 rounded cups cranberries (I used frozen)
* optionally add in orange flavor or sub orange juice for some of the water
* optionally top with crushed pecans
Mix everything except the cranberries and 1/2 the zest. Add in cranberries. Spoon into silicone muffin pan and top with zest. Bake at 350 F. I forgot to write down how long I baked them, sorry.
Makes 21 muffins. I used approx 28 g of batter for each muffin.
