Restaurant Sézanne, Tokyo (**) – Shanghai hair crab + White truffle meal. (Course info in comments)

  1. I was lucky enough to get to try the White truffle and hair crab seasonal course at Sezanne in Tokyo run by chef Daniel Calvert.

    The dining room was gorgeous and the pre-meal drinks bar was well fitted and comfortable. I was super happy with the atmosphere and the service throughout the night.

    After the amuse bouche (not pictured, Gruyère gougère), there was a corn and crab soup – delicious and hearty with plenty of crab in the soup. Great start.

    We then had what was described as a ‘western’ sushi: fish, mousse and filo pastry layered. Very pretty and tasty. Light but it packed flavour.

    We were presented the crabs, they had been boiling in yellow wine for 5 days to make ‘drunken crab’ tarts. Super tangy with a very complex flavour including the wine. Great.

    Next was a fish (Amadai) dish with spinach, peanuts and a shrimp sauce. The texture from the crispy skin really worked but this ended up being one of the more forgettable dishes.

    The following dish of crab and white truffle risotto was my favourite of the night. Using that much white truffle is cheating.

    Then a galette of scallops with uni sauce and ginko fruit. The hits just kept coming. Scallops are a favourite of mine and the sauce paired so well with anything and everything.

    Marinated salmon roe with cucumber. This was a lot lighter than the previous dishes and was very clever as a palette cleanser before the main.

    We were presented with a Japanese duck which was served 2 ways – as a traditional style dish with amazing crispy skin, deep sauce and smooth potato; and as a curried rice dish (which was my favourite of the 2).

    Moving into the desserts. Saffron jelly over a Sauternes ice cream. Never had anything like this before, right on the line between savoury and sweet and very indulgent.

    Finishing (or so we thought) with a chestnut and white truffle tart which was by far the best sweet dish. Again, white truffle is cheating.

    We were then presented with a clever crème brûlée ice cream in an egg shell and the petit fours including carrot cake with crab roe in it (it really worked)!

    All in all a fabulous meal. With the wine it came to about £950 for 2 people, so not cheap but I feel as though it was good value. Highly recommend Sézanne.

  2. MMMMmmm that duck looks delicious. We just came back from a stay there for our honeymoon. Wonderful service from the staff and their tea service was Halloween themed and super cute. Glad to hear the restaurant lives up to expectations.
