Veggie Ramen in Beet broth.

    Ingredients:

    1 medium onion finely chopped, a little bit of cooking oil (preferably sesame oil), 2 to 3 fresh cloves of garlic minced, 2 inch ginger root peeled and minced, low sodium soy sauce about 1.5 tablespoons, cayenne pepper about 1 teaspoon, powdered beet 2 teaspoons ( I get this online).
    Boiled egg, 1 yellow squash or zucchini, avocado, scallions chopped. Black sesame seeds for garnish. And of course ramen noodles.

    Cooking instructions:

    Broth — sauté finely chopped onion in sesame oil on medium heat until browned. Add minced ginger and minced garlic and sauté some more. Pour water and bring to a boil. Add soy sauce, cayenne pepper and powdered beets. Mix well and set aside.

    Noodles — I use whole wheat Hakka noodles for this. It has more fiber and tastes better in my opinion. Soak it in warm water until al dente. Rinse to remove excess starch. And add to the ramen broth.

    Toppings — I used roasted yellow squash, sliced avocado, boiled egg and chopped scallions. (I’d have loved mushrooms, but didn’t have them handy)

    Garnish — black sesame seeds and a little bit paprika. Crumbled seaweed also makes a great garnish, but didn’t have it today 🙁

    My husband did time years ago and this is what he used to call jailhouse soup, and he taught me to make it. Ramen is available in jail vending machines. Since he cooked in Vegas casinos, they always had him working the kitchen, so he would steal vegetable scraps and Tabasco sauce to make an elevated ramen soup. It is one of my favourite meals.

  3. Oh wow it looks great, and beet broth sounds intriguing, but I read that it uses powdered beets? So that’s interesting because at first I thought it would use the juice from canned/pickled*not sure if it’s the right word* juice.

    This sub has made me realise just how boring and bland of a vegetarian I actually am🙈😅
