406 calories for the entire sheet pan of veggies, used as sides for three meals. Last night I ate them with ‘honey’ bbq Beyond meatballs. So yum.

    150 g potatoes

    1 x small onion

    72 g carrots

    63 g radish

    115 g asparagus

    274 g cabbage

    2 corn ears cut into thirds

    spray oil, salt, pepper

    ‘honey’ bbq meatless meatballs: take regular bbq sauce and add soy sauce and sweetener to taste. Brown meatballs in pan and add sauce toward end on reduced heat.

  2. Gorgeous assortment! Making veggies ahead of time and then pairing them with various vegan proteins is pretty much how I do meal prepping. I also have lightly steamed veggies that I can just throw in with whatever I making to volumize.
