59 calorie jalapeno cornbread muffin tops (3″ diameter). Great with chili.

    11 muffin tops:
    * 60 g low cal flour (Fiber Gourmet)**
    * 1/2 c cornmeal
    * 1/3 c sugar
    * 1/2 tsp salt
    * 1/2 T baking powder
    * 10 T plant milk (Silk Cashew)
    * 1/8 c milk
    * 1/2 jalapeno

    optional additions: cheeze, chili powder, cumin powder, corn

    Turn oven on to 350 F. Mix everything together and spoon out about 34 g of mixture for ea muffin. Bake for around 15 minutes or until golden brown.

    **If you use regular flour the muffin tops are about 73 calories ea.

    Not sure what calories are for chili (friend made it). I think it’s a recipe from Spruce website and has lentils and Beyond Steak in it.
