Spinach egg scramble.

    Ingredients:

    Spinach — frozen chopped spinach. 10oz carton. Thaw the block.

    Onion — 1 medium. Chopped.

    Cooking oil — 2 tablespoons.

    Garlic — 5 fresh cloves. Minced.

    Eggs — 4 large. Crack into a bowl and whisk lightly.

    Salt and Pepper — to taste.

    Cooking instructions:

    Heat oil in a skillet on medium heat. Sauté onions until uniformly browned. Add minced garlic and sauté for a couple of minutes. Add the chopped spinach and cook until much of the moisture is removed. Add whisked eggs into the spinach and cook on low heat stirring everything in a scramble-style. Add salt and pepper to taste. Enjoy!

    Note — It refrigerates well. You can make it in large batches and save it for leftovers.
