“Steak” & eggs fried rice

  1. **Ingredients**

    1 package Beyond steak seared tips
    3 large carrots, small dice
    1 medium yellow onion, small dice
    4 cloves garlic, finely chopped
    ginger, roughly 4-inch piece, finely minced
    8 cups (guesstimate) of day-old cooked basmati rice
    1 head broccoli, broken down into florettes, tender stems trimmed and diced
    frozen peas, 6oz
    4 eggs
    1 bunch green onion, thinly sliced
    soy sauce, to taste
    toasted sesame oil, to taste
    water, small amount as needed

    **Instructions:**

    1. Cook steak tips according to package directions, set aside in mixing bowl.

    2. Cook the aromatics & rice.
    Add 1 tsp neutral oil to skillet, heat over medium high until it shimmers.
    Add some carrot and onion, stir for a few until tender
    Add some ginger & garlic and stir until fragrant
    Add some rice, stir until mixed well, coated with tasty oil, and heated through
    Remove to mixing bowl and repeat Step 2 until all those ingredients are cooked (I used 1/3 each time, so 3 batches)

    3. Cook the broccoli and peas.
    Add 1 tsp neutral oil to skillet, heat over medium high until it shimmers.
    Toss broccoli florets and stems into pan with about a tablespoon of water and cover for a few minutes.
    I let them get a little bit charred on one side before tossing them around in the pan to char a bit on the other side. Add another tablespoon of water if needed. I saved a bit of garlic/ginger for this part but it doesn’t matter.
    Add frozen peas near the end of this process.
    Remove to mixing bowl with everything else.

    4. Make an omelet.
    Crack 4 eggs into a bowl, season with salt and pepper and whisk until mixed well.
    Add 1 tsp neutral oil to skillet, heat over medium.
    Add your eggs, swirling the pan as needed to cover the bottom. As they solidify, pull the eggs in from the sides with a spatula and repeat the pull/tilt/swirl actions as necessary until your eggs are cooked to your liking. Roll it up and slice into rounds.
    Add the sliced egg to the mixing bowl with everything else.

    5. Seasoning & serving time.
    Dump in the thinly sliced green onions (scallions) and start seasoning with soy sauce. It will take more than you’d like, probably. I don’t really pay attention to the quantity; I just add it until I’ve got enough and try not to think about the sodium content too much.
    Add a small drizzle of toasted sesame oil and mix the whole thing up, breaking apart any pieces of egg that are too big, and serve.

    edit: This can be made vegan by omitting the eggs. Everything else, including the steak tips, is vegan.

  2. I only used that modestly-sized receptacle for taking pictures, just in case anyone worries that I’m going to starve to death. As soon as the camera got put away, that bowl was unceremoniously dumped into my normal eatin’ trough.

  3. I really want to try those steak tips but I haven’t come across them yet at my local grocery store. Might have to branch out to a few other stores to see if they have them

    I have some Beyond steak. Never thought about doing stir fry with it. Definitely have to give it a shot

  6. How is their “steak”? The only one I’ve had are the Gardein beefless tips, and the texture was really off-putting to me.

  7. Looks great. I like the Just Egg egg product for egg and cheese sandwiches and I might try it in this recipe.

  8. That looks great. I’m inspired and will be making Chinese food soon but using the Trader Joes beefless bulgogi. I made Philly cheese steak sub’s with the Beyond steak and it was excellent.
