Veggie Stew with Okra, Black beans, Corn, Red peppers and Arugula.

    Ingredients:

    Okra — fresh. Chopped into thick slices. 2 cups.

    Onion — 1 medium. Chopped.

    Tomatoes — Two medium sized Roma tomatoes. Chopped.

    Red bell pepper or red sweet peppers — chopped. Half cup.

    Canned Black beans — 1 can. Drain and rinse.

    Frozen corn kernels — 1 cup.

    Fresh Arugula — about 2 cups.

    Chia seeds — 1 tablespoon.

    Cooking oil — 2 tablespoons.

    Garlic — 4 to 5 fresh cloves. Minced.

    Ground cumin — 2 teaspoons.

    Ground Coriander — 2 teaspoons.

    Paprika — 2 teaspoons.

    Vegetable stock — depends on how thick/thin you want your stew. I used 3 cups.

    Salt and black pepper — to taste.

    Procedure :

    Heat oil in a saucepan on medium heat. Sauté chopped onion until browned. Add chopped okra and minced garlic and sauté for about 10 mins. Add chopped tomatoes and let cook until it softens and gets mushy. Add the rest of the ingredients and let it simmer until all the veggies are cooked. Adjust the stock and salt and pepper in the end to your liking. Enjoy!!

    A good combination to eat as is, raw salad. Why? It will digest slowly and stay with you longer uncooked. Your system will have more time get the nutrients it needs. 🙂
